Beef Barbacoa

What is traditional barbacoa? It is meat slowly cooked over a fire, or more traditionally, in a hole in the ground. It is known for its tenderness and full flavor. Our version of Beef Barbacoa is packed with flavor and exceptionally tender, but we swap out the fire/hole for a crock pot. Chuck roast or brisket can be used with this recipe. Use the beef for tacos, burritos, burrito bowls, salads, or nachos. It's delicious any way you choose. This time we served it on tortillas with red onion, cilantro, and a dollop of sour cream. You can add pico, guacamole, and cheese too, but I promise with this much flavor you wont need all the fixings!

Beef Barbacoa

Ingredients:

2 teaspoons minced garlic

2 teaspoons cumin

1 teaspoon oregano

1/2 teaspoon salt and black pepper

1/4 cup broth

2 chipotle chiles in adobo sauce chopped

2 bay leaves

1/4 cup apple cider vinegar

1/4 cup lime juice

2-3 lb chuck roast or brisket

Process:

1. Cut beef into large chunks.

2. Put all ingredients into crock pot. Cook on high for 4 hours.

3. Shred meat with two forks.
