Anyone else due for a detox after all their holiday eating? I have enjoyed my last Christmas cookie. Now it's time to back off the carbs and start adding back some vegetables to the mix.
This recipe can be made up quick with little effort. It's full of veggies, and it also uses ground beef for a good dose of protein to keep you full a bit longer. I am trying to limit carbs for now, but you could also make up some rice to go with it. This Skillet Egg Roll recipe is a great one to get your eating back on track. It tastes great too!
-1 lb ground beef
-1 onion diced
-2 garlic cloves minced
-1 tablespoon apple cider vinegar
-1 tablespoon sesame oil
-1 teaspoon ground ginger
-1/4 cup soy sauce
-1 bag coleslaw mix
-Salt & pepper to taste
1. Brown ground beef in skillet.
2. Add onion, garlic, apple cider vinegar, and sesame oil. Stir until onion is tender.
3. Add ground ginger, soy sauce, coleslaw mix, and salt & pepper to taste. Cook for 5 minutes in skillet.
4. Serve in bowl. Top with green onions. Can serve with rice as well.
