Cindy's Crockpot Chuck Roast

We often have farm projects on the weekends. If it's big enough the whole family gets involved. Grandma Cindy watches the young grand kids and makes the meals while the farmwork gets done. When the job is done, we look forward to heading in for a hot meal. This crockpot recipe is simple for her to prepare the night before.


Chuck Roast comes from the shoulder or the Chuck primal. Cuts from this primal are known for their deep flavor. Chuck Roasts are collagen rich. As you cook the roast low and slow the collagen will render down. As this happens the meat becomes fork tender, and the flavor deepens.






INGREDIENTS:

3-4 Lb Chuck Roast

2 Yellow Onions Sliced

6 Carrots Peeled and Chopped into Large Pieces

6 Potatoes Peeled and Chopped into Large Pieces

2 Cups Water or Bone Broth

1/2 Teaspoon of Thyme

1 Clove Garlic Crushed

Salt & Pepper to Taste



STEPS:

  1. Cut vegetables and place in crock pot.

  2. Season roast with salt & pepper.

  3. Place roast in crock pot.

  4. Add remaining seasonings.

  5. Add liquid (bone broth/water).

  6. Cook on low for 8 hours.
